Native to the Andes, Yacon thrives in warm climates and produces large, sunflower-like foliage with edible, water-rich roots that taste like a cross between apple and watermelon. Yacon has a similar texture to jícama. The purple-skinned variety offers an extra pop of color and sweetness! Plants grow vigorously through the summer and reward you in late fall with a generous harvest of tubers. Yacon has two types of tubers: the deeper-growing edible storage tubers and the much smaller edible propagation tubers which grow just under the soil surface.
